Vegan Spinach White Bean Dip

 

Cannellini beans make the ideal velvety base in this Vegan Spinach White Bean Dip for a shockingly tasty and solid canapé for any gathering.

Vegan Spinach White Bean Dip

 

This plunge is intensely awesome scrumptious. Indeed, even my incredulous dad in law, who is a lot of a basics sort of fellow, delighted in a few nibbles.

 

Ingredients

 

  • 1 garlic clove, minced
  • 1 bunch fresh spinach
  • 1 tbsp olive oil
  • ¼ cup nutritional yeast
  • 2 cups cooked white beans such as great northern or cannellini
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tbsp vegan mayo such as Vegenaise
  • ¾ - 1 tsp salt
  • crackers, toasted bread, veggies, etc. for dipping
  • ¼ tsp pepper

Instructions

  1. Wash spinach thoroughly and chop.
  2. Heat 1 tbsp. olive oil over medium heat and sauté spinach until wilted. Salt and pepper lightly.
  3. In a food processor combine beans, nutritional yeast, 3 tbsp olive oil, vegan mayo, lemon juice, garlic powder, salt and pepper until beans have broken down completely and mixture is creamy.
  4. Add spinach and pulse just to combine.
  5. Serve with crackers, bread, or veggies.
