Lemon Shrimp Scampi with Pasta Recipe

Lemon Shrimp Scampi with Pasta Recipe

 

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 lemon freshly squeezed and ½ lemon thinly sliced
  • 1 lb. shrimp (thawed) Argentinian Red Shrimp
  • 8 oz. pasta (Angel Hair or any pasta)
  • 2 tablespoons dry white wine (can substitute water)
  • 3 cloves garlic minced
  • Kosher salt and pepper to taste
  • 1 teaspoon red pepper flakes
  • Parsley for garnish

 

Instructions

 

  1. In a large pot of boiling water, cook pasta according to directions. I add a little olive oil to prevent sticking.
  2. Melt butter in a large skillet over medium heat.
  3. Quickly saute the garlic but don't let it burn. Turn down the hear if you see it turning borwn.
  4. Add olive oil, shrimp, and dry white wine.
  5. Cook stirring occasionally until the shrimp turns pink. About 2-4 minutes.
  6. Stir in lemon juice and bring it to a simmer.
  7. Drain pasta and toss with the shrimp mixture.
  8. Add lemon wedges.
  9. Season to taste with Kosher salt and pepper.
  10. Garnish with red pepper flakes and parsley.
  11. Serve immediately.
